Weight Watchers. 4 Servings. 3 pts per 1 1/4 cup serving.
- 3/4 Cup Wheat berries
- 6 oz Shrimp
- 3 Tbsps lime juice
- 1 1/2 Tbsps fish sauce
- 1 tsp brown sugar
- 1 med seedless cuke peeled, halved and chopped
- 6 radishes, small
- 1/4 Cup fresh basil, chopped
- 2 Tbsps mint leaves, chopped
Place wheat berries in a med pot cover with 3 inches of water and simmer over med-high heat, stirring once or twice. Cover, reduce heat to med-low and simmer until tender (50 min). Drain and let cool.
Rinse pot, and fill halfway with water. Bring to a boil and add shrimp. Reduce heat and simmer until shrimp turn pink. (2 min) Drain, rinse and chop.
mix lime juice, fish sauce, and sugar.
Toss it all together.
