- 1 Cup flour
- 1/2 Cup butter
- 1 1/4 Cups sugar
- 3 Cups rhubarb cut to 1/2in
- 1 Tablespoon flour
- 12 ounces cream cheese
- 2 eggs
- 8 oz sour cream
- 2 Tablespoons sugar
- 1 teaspoon vanilla
Crust: mix 1 cup flour 1/4 cup sugar, and 1/2 cup butter pat into 10in pie plate, set aside.
Rhubarb layer: combine rhubarb, 1/2 cup sugar and 1 Tbsp flour, toss put in crust.
bake at 375°Ffor about15min.
Cream Layer: Beat together cream cheese and 1/2 cup sugar until fluffy. beat in eggs one at a time then pour over hot rhubarb.
Bake at 375°Ffor about 30min.
Topping: combine 8 oz sour cream, 2 Tbsp sugar and 1 tsp vanilla, spread over hot pie
