Started with the Joy of Cooking recipe, and modified it. Usually enough for 3-4 people.
You need 1/4 tsp Baking soda, for every half cup buttermilk.
Yogurt can be substituted for the buttermilk 1:1, but the batter will be very thick. You
could dilute it with milk, but if you do that, you might want to add 1/4 tsp baking soda to compensate for the extra volume.
- 2 Cups Flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp Cinnamon
- 1/3 Cup sugar(optional, with enough, you don't even need syrup)
- 2 eggs
- 2 Cups buttermilk
- 3-4 Tbsps melted butter
Mix dry and wet(including melted butter) ingredients seperately. Then mix together, but not too much, a few lumps are okay.
Cook in a preheated pan or griddle on medium low. No grease necessary if the melted butter is used.
